Rainbow Salad

Ever since eliminating meat and poultry from my diet, I find myself constantly craving huge wholesome meals. At risk of sounding hubris, the bowl featured above was probably the best (and prettiest) salad I have ever consumed, so I just had to share it with you guys (and publish it on the World Wide Web so that I never forget how to make it!) All you need is a fresh lettuce mix, chickpeas, shredded carrot, corn, avocado, beetroot, a veggie patty (I use the burgers by Larder Fresh) and some homemade dressing of organic apple cider vinegar and olive oil. My boyfriend and I enjoyed this picnic style on the floor by my pool and felt like very happy little hippies by the end.
