Acai bowls are one of my favourite meals- and yes, I use the word "meal" because I'm not opposed to devouring one for breakfast, morning tea, lunch, afternoon tea, dinner and/or all of the above! However, a great deal of researching (and taste-testing) led to my unfortunate discovery that most bowls contain loads of unecessary sugar that totally hinder the health benefits! I thus decided to start making my own unsweetened/low-frutose version and am proud to say I have finally perfected the recipe below:
Ingredients
For the smoothie you will need

1 x sachet of frozen Acai or 2 x tablespoons of Acai Powder (I buy both of mine from About Life)

1 x cup of frozen mixed berries

1x cup of unsweetend coconut water
-
1 cup of crushed ice
For the toppings you will need
-
1x handful of gluten free muesli or granola, buckinis or nuts
-
As much shredded coconut as you like (I like a lot!)

Some cut up fresh fruit of choice
Method
Put all of the above ingredients in a blender (I use a Vitamix), and blend until the consistency is thick. To determine whether it is thick enough, turn your blender upside down without the smoothie moving! If it does move, add more crushed ice or frozen fruit until the consistency is thick enough to eat with a spoon. Alternatively, if the consistency is too thick, add some more liquid! After you have perfected the consistency, top it with whatever you like!
